Well today was the day - I made the apple and cinnamon mix. Very nice and it all went together real easy. Unfortunately, I didn't get the camera out quick enough to get a picture of the actual muffins themselves - just of them being eaten!

I just had to write in to say that the banana muffin mix is my muffin nirvana. I was deprived of a decent gluten-free muffin for so long, you just can't find something like this in the shops. I gave the mix to my daughter who promptly turned the bag of ingredients into a delicious cake - SO delicious in fact that we (and neighbours) ate the whole lot!!. It was so easy!  Definitely a roaring success! No-one could believe it was made with brown rice flour...
